Chinese Chicken with Mushrooms


4 skinless chicken fillets
1 small tin sliced mushrooms (reserve 1
tablespoon of the liquid for marinade)
¼ teaspoon salt
black pepper to taste
1½ tablespoon soy sauce
1 tablespoon dry sherry
1 teaspoon sugar
1 teaspoon sesame oil
1½ tablespoon cornstarch
1 tablespoon shredded fresh ginger
1 red onion, sliced


Serves 4

Cut chicken into approximately 2cm cubes.

Add all the other ingredients except mushrooms, ginger, and green onion. Stir together and allow chicken to marinate for 15 minutes.

Wrap the chicken pieces in foil. Surround chicken pieces with mushrooms.
Distribute shredded ginger and red onion over all.

Place the foil package in the steamer and steam for 20 minutes or until thoroughly cooked.

Mushrooms give this chicken dish a nice, earthy flavour. Serve over rice or quinoa and add a side of green beans or carrots for a dinner everyone in the family will like.
