Easy Microwave Chimichangas


2 Flour Tortillas
200g Chicken Fillets, cooked & cubed
1 Tin Tomato relish
2 Tbsp Tomato paste
1 Tbsp Parmesan
¼ Cup Mozzarella
½ Cup Mixed peppers, cut in strips
1 Tomato, finely chopped
1 Medium onion, Finely Chopped
Cream cheese


Lay the two tortillas on a clean surface.
Spread with tomato paste, arrange chicken, peppers & mozzarella in a centre line and roll like a pancake.
Place in Baking dish, pour the tomato relish over and sprinkle with the parmesan.
Salt and pepper to taste.
Bake in microwave (on medium)for 10 minutes, garnish with cream cheese, salsa and coriander.
