Hearty Beef Stew with Vegetables

Time: 8 - 10 hrs


2-3 lbs. beef stew meat, cut into 1" pieces

3 med. Potatoes, peeled, cut into cubes

4 med onions , cut into eights (or 6-8 small whole onions)

3 stalks celery, sliced

1tsp salt

1/4 tsp pepper

1/4 tsp basil

1/4 tsp thyme

1/4 tsp oregano

1 ay leaf

Beef broth or bouillon to cover


Trim fat from meat, cut into 1" chunks. Place meat, carrots, potatoes, celery, onions into crockery vessel. Add salt, pepper, and spices. Add liquids. Stir throughly. If thickening is desired, add 2 tablespoons of quick cooking tapioca before cooking. Cover and cook.
