Honeyed Nectarines and Vanilla Yogurt

Ingredients

3 ripe nectarines, cut into wedges or 1 small tin, drained
2 tbsp butter, melted
1 tbsp honey
1/2 tsp crushed cardamom
300ml plain, low fat yogurt flavoured with 1/6 tsp vanilla powder
Handful fresh lavender, finely chopped
1 small ciabatta or french loaf, thinly sliced
1 tsp castor sugar

Directions

Mix the nectarines, 1 tbsp butter, honey and cardamom in a bowl.
In a cup, mix the lavender, 1 tbsp butter and castor sugar.
Brush the lavender butter on the bread slices and grill until crispy.
Allow to cool.
Heat the frying pan on maximum and grill the fruit until golden brown on both sides.
Serve hot with the yogurt and lavender crisps.

Tip
Ripe or tinned pears and apples can also be used.
Replace cardamom with cinnamon.
