Seared Salmon with Grilled Asparagus

Ingredients

150g salmon fillet
Olive oil
1 large potato, cooked and mashed
5 asparagus spears
Garnish
75ml cream cheese
Capers
1 lemon
Dill

Directions

Place asparagus in a bowl, drizzle with oil and sprinkle with salt and pepper.
Drizzle the salmon with olive oil and lemon juice.
Heat the frying pan on medium and grill the asparagus for 2-3 minutes.
Return to bowl.
Turn the heat to maximum and sear the salmon on both sides until golden brown (about 1 minute each side).
Serve with mashed potato, cream cheese, capers, lemon wedge and dill.

Tip
If you prefer your salmon well done, grill it on medium for 4-6 minutes.
Any white fish, sole, tuna or trout is perfect for this recipe.
