Sweet and Sour Pork


250g pork, cubed
1 green pepper, roughly chopped
1 tin pineapple chunks
Handful cherry tomatoes
1 medium red onion, roughly chopped
¼ cup soy sauce
4tbsp olive oil
4tbsp sherry
¼ cup water
1 ½ tbsp. Maizena
2tbsp tomato paste
¼ cup white sugar
¼ cup vinegar


Heat white sugar and vinegar in the work on medium until sugar is dissolved.
Stir Maizena into ¼ cup water and add to vinegar and sugar mix.
Add pineapple chunks, sherry and tomato paste. Simmer for 15 minutes.
Pour into gravy pot and wipe the wok.
Heat the oil till smoking hot. Fry the pork until golden brown.
Add pepper, onions and tomatoes and fry for 5 minutes while drizzling with soy sauce.
Mix the sauce into stir-fry and serve with rice or noodles.

For extra flavour, add Chinese 5-spice to the sauce and garnish with mint or coriander
